FOOD OF THE MONTH FEB ‘2024


Harissa is one of the old traditional Armenian dishes. It has an interesting method of preparation and takes about 4-5 hours to prepare, depending on the type of the semolina.


INGREDIENTS:

  • Chicken – 1 piece
  • Wheat groats – 300 g
  • Butter – 150 g
  • Salt – 1 tbsp


INSTRUCTIONS:

  1. Cook the chicken until tender, save the broth, then remove and separate all the meat from the bones.
  2. Save the bones to make broth, you’ll need extra liquid for cooking the wheat.
  3. Wash the wheat, place in a large pot, then add the chicken and broth, and start cooking.
  4. Cook and stir on medium heat.
  5. As the liquid simmers, add more broth (the one you made with chicken bones or simply add boiling water).
  6. Cook and stir Harissa for 4-5 hours or until all the chicken meat is dissolved with wheat.
  7. Thick and heavy porridge consistency is what you need for perfectly cooked Harissa.
  8. Remember to stir occasionally to prevent sticking.


Harissa is served with melted butter, ENJOY !
